Dolcetto (meaning "sweet" in Italian) is an early ripening varietal, producing wines that are fruit forward and ready to drink upon release. Langhe is a territorial Denomination, a category based on careful selection of grapes in the vineyard. For example, a Dolcetto vineyard that produces grapes for the production of Dolcetto d'Alba, will also produce grapes for Langhe Dolcetto DOC, which are separated from the others and vinified differently. The grapes are destemmed prior to pressing and fermented in stainless steel to preserve the freshness of the wine. Open-tank fermentation lasts about one week as the natural grape flavors balance with a clean acidity. For Umberto Fiore this is a wine that echoes the founding of the Cantine, as it was one of the first wines that Pietro Fiore produced in the 19th century.
The pallet shows excellent complexity. This wine is redolent of spring flavors with ample fruit, delicate acidity and length on the finish.
